Pancake mix : Cinnamon Orange Pancakes

Cinnamon Orange Pancakes
(This recipe yields 6 servings)
  • 1 cup whole wheat flour
  • 3/4 cup all-purpose flour
  • 1 cup low-fat milk
  • 3/4 cup fresh orange juice
  • 1 large egg or egg substitute equivalent
  • 2 Tablespoons Wheat germ
  • 1 and 1/2 Tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon orange zest or finely grated peel
  • 1 teaspoon cinnamon
  • 2 pinches of salt
  • cooking spray
In a large mixing bowl, sift together the two flours with the wheat germ, sugar, baking powder, cinnamon and salt.

In a separate medium bowl, beat the egg slightly. Add milk, orange juice and orange zest and mix well.

Add wet ingredients to dry ingredients and stir until just mixed and moistened.

Prepare a griddle or large skillet at medium-high heat with a coating of cooking spray.

Dollop batter onto hot surface in 1/4 cup amounts to make individual pancakes. Cook until bubbles begin to appear in the center of pancake. Flip and cook other side until golden brown.

Vegan pancake mix recipe.Yummy..believe me.

When i was young, I was always didn't like veggie and feel like .. What!! pancake without egg and milk .. NO WAY, but you should believe me. Vegan pancake is delecious!!
I got this pancake mix recipe from Easy vegan pancake recipe by Jolinda Heckett,about.com
You can make perfectly good pancakes mix without eggs or even milk! This vegan pancake mix recipe uses soy milk as a substitute and the result is perfect light and fluffy pancakes. You might also want to try this recipe for vegan blueberry pancakes or a sweet vegan pancake recipe with strawberry.

Ingredients:

  • 1 cup flour
  • 1 tbsp sugar
  • 2 tbsp baking powder
  • 1/8 tsp salt
  • 1 cup soy milk
  • 2 tbsp vegetable oil

Preparation:

Combine the flour, sugar, baking powder and salt in a large bowl until well mixed. Mix in the soy milk and oil and beat together until batter is smooth.
Drop 1/4 cup of batter at a time onto a hot oiled griddle, or well greased frying pan over medium high heat. When bubbles appear on the surface of the pancake, approximately 3 minutes, flip, and cook the other side for another 2 minutes. Enjoy!
